Season's Greetings!

Photos ⎮ kuvat:   Katja K. #kahwacafe #kandju

ENG I'm sending you Season's Greetings from my recent trip to Canada, greetings as yellow as Montreal in the autumn: bicycles, books, and bonbons; signs, shop fronts, and street art; maple leaves; and the cover of Rupi Kaur's "The Sun And Her Flowers". And Poutine, an iconic Quebec dish of french fries topped with cheese curds and smothered in gravy!

So give me coffee and... oat milk!

Photos ⎮ kuvat:   Katja K.

ENG I'm having my morning coffee with some Blur... Just love the band's "Coffee and TV" video featuring a milk carton looking for guitarist, Graham Coxon, who wrote and (sang) the song to describe his struggle with alcoholism...

I'm having coffee and loving it, too! Frezza Oat Latte is a vegan and non-dairy espresso and oat milk drink with a hint of cane sugar, also available with almond milk.
The espresso is a blend of UTZ-certified robusta and arabica beans, and, what's best, the drinks come in an environmentally friendly carton can with a lower carbon footprint than the normal beverage packs. Remember to recycle!

To go with my coffee, I'm having Loov gingerbreads from Estonia (gluten free, dairy free). Baked with coconut oil and buckwheat, "every biscuit is placed on the baking tray by hand!" the producer claims. "Life can be healthy, wholesome, sweet and organic."

FIN Minä juon aamukahvia Blurin kanssa... Bändin "Coffee and TV" -video on ihana! Muistatko?

Revisiting: Refashioned

Photos ⎮ kuvat:   "ReFashioned: Cutting-Edge Clothing from Upcycled Materials"

ENG It's Global Recycling Day, and to celebrate I'm revisiting some themes I've explored during my five years of blogging. ReFashioned: Cutting-Edge Clothing from Upcycled Materials by Sass Brown (Laurence King, 2013) is a beautiful book, just read Natalie Chanin's (Alabama Chanin) foreword:

"During my years of working in the fashion industry, I have seen first-hand the effects of newer, faster and 'better' ways of living and buying. Ultimately, choosing faster and cheaper can equate to unwitting disregard for humanity and the environment.
It is often much easier to consume what is convenient without thinking too much about the larger impact or consequences of our chooses – particularly the continuing use of toxic chemicals, haphazard disposal of these wastes, unprotected workers and unsafe practices. These conditions simply cannot be sustained long-term if we are to continue living on this beautiful blue planet. As globalization makes our fashion production more and more transparent, we are no longer blind to manufacturing methods. As the processes become understood by the end consumer, customers begin to make choices.

Patti Smith once said, 'I choose Earth'. I see a future where we all choose Earth.

I applaud the work of Sass Brown and all the designers and innovators who are working toward that future. I believe that the greater 'machine' can be slowed and reined in, and that beautiful ways of working can grow from that restraint. Those outlined in this book are individuals and companies that make me hopeful and are making a difference in the world today.
For instance, the work of MAYER Peace Collection includes handcrafted tailored jackets and coordinating separates made from antique fabrics, and perfectly illustrates the beauty that comes from upcycling material. Piece x Piece offers a personal response to the overwhelming amount of waste produced by the fashion industry by using waste cuttings from other garments producers. What would traditionally be considered trash and would find its way to a landfill is now the basis of stunning limited-edition pieces of clothing. As I read through Sass's book, I clearly see beautiful new values emerging on every front.
My journey with textiles spans my entire life, beginning with memories of my grandmother's sewing circles during humid summers in northern Alabama. The magnificent quilts made then are now considered valuable treasures, but were commonplace and practical at that time.

These women 'upcycled' out of necessity, using fabric taken from salvaged flour sacks and outgrown Sunday dresses that had seen their last wearing.

While these seamstresses surely never used the words upcycled, recycled or sustainable design, their common-sense approach and practicality are characteristics we should emulate and applaud.
My experience of over a decade with my company Alabama Chanin tells me that recycling and repurposing texts lends to the complexity, artistry and value of a finished design. As people, our many roles change and evolve over the course of a lifetime; I love the idea that textiles can do the same. Sass Brown's work proves that reviving something in order for it to serve a new purpose can be a beautiful act of conservation, design and art.

FIN Tänään on maailmanlaajuinen kierrätyspäivä, ja ajattelin juhlistaa sitä nostamalla esiin joitakin teemoja, joita olen käsitellyt viisivuotisen blogiurani aikana. Sass Brownin ReFashioned: Cutting-Edge Clothing from Upcycled Materials (Laurence King, 2013) on kaunis kirja – riittää, että lukee Natalie Chaninin (Alabama Chanin) esipuheen (yllä).

Revisiting: Artek 2nd Cycle

Photos ⎮ kuvat:   Sini Pennanen (Sininen Kuva), published in a Business Finland article "Artek: Manifesto of a 21st Century Design Company"

ENG It's Global Recycling Day, and to celebrate I'm revisiting some themes I've explored during my five years of blogging. Artek's 2nd Cycle was one of my first topics as a blogging novice five years ago – I would never give up my secondhand Artek!

Later on I bumped into the following interview (excerpt) of Mirkku Kullberg, former managing Director of Artek, on Northern Delights. Scandinavian Homes, Interiors And Design (Gestalten 2013) – also published five years ago:

"Please explain the idea behind Artek's 2nd Cycle Project. – Artek 2nd Cycle was a manifesto against the madness of Milan 2007 and the fair buzz in general: the press, dealers, and consumers were running after newness and the latest of the latest. Artek had been blamed often for showing the 'old' Aalto icons and nothing new. Our question was: so what if we think that old is better than most of the new things out there?
In 2007, the word 'sustainability' was quite new, while the whole design scene was dancing tango with fashion – fast and furious. Artek wanted to challenge the whole scene and declared Sustainability as Attitude and started talking about authenticity and origin of the design. We wanted also to talk about quality and design as an investment. Artek is the only company that can really own the second-hand market as we still have the same production, same standards, and systems with product components.
The main idea behind 2nd Cycle is to talk about longevity and durability – the main factors when talking about sustainability. Our motto is "One Chair Is Enough", meaning that the Artek product can live from one generation to the next one without losing its value or identity. The design, the beauty, and the quality stand for time. We also think that people need layers in their lives. 2nd cycle is an excellent way of combining the old and the new. This gives people wider perspectives.

FIN Tänään on maailmanlaajuinen kierrätyspäivä, ja ajattelin juhlistaa sitä nostamalla esiin joitakin teemoja, joita olen käsitellyt viisivuotisen blogiurani aikana. Artekin 2nd Cycle oli yksi ensimmäisistä aiheistani aloittelevana bloggaajana viisi vuotta sitten – minä en koskaan luopuisi kierrätetyistä Artek-huonekaluistani!
Myöhemmin törmäsin Artekin entisen toimitusjohtajan Mirkku Kullbergin haastatteluun Delights. Scandinavian Homes, Interiors And Design (Gestalten 2013) -julkaisussa, samoin viiden vuoden takaa, ja olen lainannut siitä englanninkielisen katkelman ylle.

High on Oats (2)

Photo
 ⎮
kuva: A meze spread prepared with different flavored Pulled Oats products in "Nyhtökaura. Vegepäivän reseptikirja", a book by Maija Itkonen & Reetta Kivelä (Siltala) that I've already listed here.

ENG Last wednesday I took part in a lunch meeting prompting us to get a grip of our meat-eating habits, #nyhtiliike in Finnish.

The luncheon was organized at Martat, a Finnish home economics organization promoting well-being and quality of life. Since the foundation of the organization in 1899, meat consumption in our country has doubled!
I'm a vegetarian – representing a mere 6 percent of the population, I am told – and already a Pulled Oats convert: see my discoveries on the nutritional value of the product combining the best of both oat and bean proteins here.
But there's more to Nyhtökaura – that the producer Gold & Green of Helsinki claims to be a perfect protein: It's ecological! Just think that by opting for Pulled Oats rather than beef to prepare a pasta bolognese dish for a family of four, you save as much as 28 tubfuls of water in one go!
Also the recycled Pulled Oats package boldly states that it "used to be a bottle", and (maybe you already guessed) a Gold & Green tote bag "used to be textile waste" and was obtained through a "purecycling" process by Finnish Pure Waste. Pretty perfect, I'd say!

Nyhtökaura, jonka Gold & Green of Helsinki sanoo olevan täydellinen proteiini, on myös ekologinen! Ajattele, että valitsemalla naudanlihan sijaan nyhtökauraa valmistaessasi pasta bolognesea neljän hengen perheelle säästyy peräti 28 ammeellista vettä kerralla!
Myös kierrätetty Nyhtökaura-pakkaus ilmoittaa rohkeasti olleensa entisessä elämässään pullo, "I used to be a bottle", ja (ehkä arvasitkin) kotimaisen Pure Wasten valmistaman Gold & Green -kangaskassin kyljessä lukee "I used to be textile waste", jota on jalostettu purecycling-prosessin avulla. Aika täydellistä sanoisin?

ENG   "Begin as you mean to go on, and go on as you began... ("Charles H. Spurgeon) – Planning on a weekend brunch in Helsinki? Why not go for a vegan brunch at Loop?

After the craze of food and drink sharing applications, a number of food waste restaurants opened their doors in Europe: Freegan Pony in Paris (temporarily closed), Instock in Amsterdam, and Rub & Stub in Copenhagen. The restaurants usually work on food donations from supermarkets, bakeries and producers, including, for example, slightly battered bell peppers or bread that has passed its expiration date the day before.

"Did you know that... if food waste was a state, it would be the world's third largest in emissions.  #fromtastetowaste

There's one in Helsinki, too: Loop, in the former Lapinlahti hospital facilities, serves lunch on weekdays and brunch on weekends. Loop co-operates with about a dozen Helsinki retailers, and it delivers roughly 90 percent of the food it receives to charity and helps unemployed young as well as immigrants and long-term unemployed get to work. Loop was originated by the From Waste to Taste project and has received financing from the European Social Fund. – I tried the weekend vegan brunch! Fully recommended, remember to book in advance!

Mikset kokeilisi Loopin vegaanista brunssia?
Loopin taustalla on From Waste to Taste -hanke, joka on saanut tukea Euroopan sosiaalirahastolta. – Minä kokeilin viikonlopun vegaanista brunssia! Suosittelen! Muista varata eukäteen!

PS Also check out Waste & Feast, a lunch restaurant operating at the Matteuksenkirkko church in Helsinki that taps into the raw material chain of food waste restaurant Loop. Waste & Feast employs young people at risk of marginalization and aims at 60-70 percent of the lunch ingredients being surplus food. Habitare 2017, Day 1: It Is A Keeper

< I'm crazy about polka dots and I find them at the Habitare Ethical Area curated by Tikau, a Finnish company combining "Scandinavian design and Indian handicraft traditions with the vision of employing and empowering the artisans of rural India. Taking a uniquely long-term, personal and human approach, Tikau collaborates directly with 120 artisans in their home villages in India, combining trade and aid. The collection consists of handmade home décor and clothing accessories."

Anno – I absolutely loved this stand! Anno's roots are "firmly in the Scandinavian way of living...  Natural materials - wool, linen and cotton... are an essential part of being close to nature, timelessly and naturally." < > Samuli Helavuo's "In pieces, but not broken III". >

Photos ⎮ kuvat: Katja K.  #Habitare

ENG This year I have the luxury of visiting Habitare on all the five days and I'm letting it sink in slowly, first guided by Signals, an experimental exhibition exploring trends in interior decoration, housing and design, where I find a text that's a definite keeper – and I'm copying it here in its entirety:

"Throw-away culture is so last season. Repair culture is the future and it is the Japanese that show us the direction. They have a tradition of valuing items. Instead of junk, they see opportunities. A broken pot is valuable for its imperfection. A crack is highlighted with gold, not hidden. This is the essence of the Wabi Sabi philosophy that has its origins in Buddhism. Nothing is permanent or complete. Everything changes and is incomplete.
People everywhere are getting tired with the ever shortening life cycle of disposable products. In Amsterdam, for instance, they have repair cafés, where broken gadgets can be fixed.
At Ambiente Fair there were beautiful chairs by Bouillon, a Japanese company that lovingly transforms broken mass produced furniture into unique design objects. This is upcycling at its most elegant form and a step towards circular economy.

Talking about "broken pots", in the No Trash! exhibition area there is, among others, Samuli Helavuo's In pieces, but not broken III (above)...

– Kertakäyttökultuuri on tullut tiensä päähän. Korjauskulttuuri on tulevaisuutta. Japanilaiset näyttävät mallia muille. Japanissa on aina suhtauduttu tavaroihin vakavasti. Romun sijaan siellä nähdään mahdollisuuksia. Rikkinäinen ruukku on arvokas nimenomaan epätäydellisyytensä takia. Säröjä korjataan kullalla eikä peitellä. Tämä on Wabi Sabia, buddhalaisuudesta peräisin olevaa filosofiaa. MIkään ei ole pysyvää tai täydellistä. Kaikki muuttuu ja on vajavaista.
Ihmiset ympäri maailman ovat väsymässä hyödykkeiden jatkuvasti lyhenevään elinkaareen. Amsterdamissa on esimerkiksi korjauskahviloita, joissa voi kokoontua yhdessä korjaamaan rikkimenneitä kodinkoneita.
Ambiente-messuilla tuli vastaan kauniita uniikkituoleja. Ne on valmistanut Bouillon, japanilainen yritys, joka rakkaudella muuttaa massatuotantoina valmistettuja sattumanvaraisesti hajonneita huonekaluja korkeatasoisiksi, design-esineiksi. Se on askel kohti kiertotaloutta hienostuneimmillaan.

"Rikkinäisistä ruukuista" puheen ollen, No Trash! -näyttelyssä on esillä muiden muassa Samuli Helavuon Palasina, mutta ei rikki III (katso yllä)...

Love Food, Don't Waste It

Photo ⎮ kuva:   Sini Pennanen (Sininen Kuva)

ENG It's Food Waste Week in Finland! According to Natural Resources Institute Finland, the eatable food loss of the Finnish food chain amounts to 400–500 million kilos per year, that is, roughly 15% of the consumed food! Let's stop this!

The greenhouse gas emissions resulting from food loss correspond to the annual carbon dioxide emissions of up to 400,000 passenger cars, an unnecessary burden on the environment and economy. Most of the food loss is generated by households (about 30% of the total loss), but also the share of trade, catering and industry is significant. – I made a list of posts in which I've dealt with leftovers below, and in the top picture there's ice cream and rhubarb compote that we enjoyed a couple of years ago in Lappeenranta, as chef Ulla Liukkonen prepared us a summer dinner based on leftovers. Thank you Ulla and Linnoituksen Krouvi!

FIN Käynnissä on hävikkiviikko!
High on Oats

Photo
 ⎮
kuva: Meatless meatballs of Pulled Oats, Katja K.

ENG I've cycled a lot recently, and to fuel myself I've eaten Pulled Oats, among others. – See the tweaked meatless meatballs recipe below!

Chosen as The Finnish Food of The Year 2017, Pulled Oats is a ready to use oat and bean protein product containing 21% oats in different forms, as well as both pea and bean protein, 21% and 11% respectively. Producer Gold&Green Foods gets rhetorical describing the balanced union between oats and beans:

"Oat is the Northern superfood. It has amazing effects on the heart health, blood sugar and digestion. Oat is also one of the most ecological crops in the world. At the end of the fork, oats & beans are yin & yang, forming together the perfectly balanced protein and a tender, juicy food structure.

I also learn that one hundred grams of Pulled Oats contain 30 grams of protein and eg. iron and potassium 42% and 19.5% of the daily benchmark dose, respectively.
A complete source of protein contains all the necessary amino acids (in the following list, only cysteine is not necessary for our body), and for one hundred grams of chicken breast and Pulled Oats the values are as follows, respectively:

Chicken breast (mg/ 100g)/ Pulled Oats (mg/ 100g)
Isoleucine    780/ 1239
Leucine    1100/ 2324
Lysine    990/ 1673
Methionine    440/ 426
Cysteine    260/ 425
Phenylalanine    710/ 1532
Threonine    600/ 1064
Tryptophan    180/ 419
Valine    980/ 1508
Histidine    320/ 717

We've got ourselves a winner! The chicken breast only beats Pulled Oats in methionine! It's amazing!

*

I often prepare "Vegetarian grannie's meatless meatballs", according to the recipe on the Nude Pulled Oats package. I like to replace the raw, finely grated potato with leftover potato mash, though, as I find it makes the texture of the pulled oats balls softer.

250 g Nude Pulled Oats
1/4 dl breadcrumbs
2 dl dried roasted onions
1/2–1 tsp salt
1/2 tsp paprika powder
1/2 tsp black pepper
1/4 dl water
1 dl cream
1 egg (or 1 tbsp lupine flour and 1 tbsp water)
1 raw potato, finely grated (or leftover mashed potatoes)

Mix the breadcrumbs, onions, spices, water and cream in a bowl and leave for 5 minutes. Crumble the pulled oats in the mixture, add the egg and grated potato – or potato mash. Blend evenly and roll the mixture into small balls with oiled hands. Bake at 200 degrees Celsius for 10 minutes or until the balls are golden brown.

Malmgård Buckthorn Vinegar and Cold Pressed Rapeseed Oil that I picked up in the mansion house shop during my recent cycling trip in the Lovisa region.

FIN Olen viime aikoina pyöräillyt paljon, ja polttoaineeksi olen nauttinut muiden muassa Nyhtökauraa (voinko siis hyvällä syyllä kutsua itseäni kauramoottoriksi?) – katso tuunattujen Vegemummon lihattomien lihapullien ohje alla!

Vuoden 2017 suomalaiseksi elintarvikkeeksi valittu Nyhtökaura on kypsä kaura-papu-proteiinivalmiste, jossa on 21% kauraa eri muodoissa, 21% herne- ja 11% härkäpapuproteiinia. Valmistaja Gold&Green Foods kuvailee sivuillaan korkealentoisesti kauran ja pavun tasapainoista liittoa:

"Kaura on oikea pohjolan superfood.

Isoleusiini    780/ 1239
Leusiini    1100/ 2324
Lysiini    990/ 1673
Metioniini    440/ 426
Kysteiini    260/ 425
Fenyylialaniini    710/ 1532
Treoniini    600/ 1064
Tryptofaani    180/ 419
Valiini    980/ 1508
Histidiini    320/ 717

Kananrinta päihittää Nyhtökauran vain metioniinin määrässä! Mahtavaa!

Teen usein "Vegemummon lihattomia pullia", joiden ohjeen bongasin pakkauksen kyljestä ja joissa mielelläni itse korvaan ohjeen raa'an, hienoksi raastetun perunan tähteeksi jääneellä perunamuhennoksella, jolloin pullien koostumuksesta tulee mielestäni pehmeämpi.

250 g Nude Nyhtökaura -valmistetta
1/4 dl korppujauhoja
2 dl paahdettua sipulirouhetta
1/2–1 tl suolaa
1/2 tl paprikajauhetta
1/2 tl mustapippuria
1/4 dl vettä
1 dl kermaa

PS Other new Finnish products high on oats that I like:

Oatis – Oat snacks with blueberry pie flavor, made with Finnish gluten-free whole grain oat flour and potato granules. The others flavors are Sea Salt and Arrabbiata Pesto, or tomato, cheese, chili pepper and garlic flavoured snacks.

Puhtikaura – Made with Finnish whole grain oats, Puhtikaura was chosen as the Finnish Food of The Year in 2016. Puhtikaura is the market's first and only pre-cooked, powdered whole grain oat product. It can be enjoyed as both breakfast and evening snack mixed with cold milk and juice soup, or with turkish yogurt, berries and honey. Mixed in your workout drink, its healthy carbohydrates keep blood glucose stable for a long time. New products have also been developed alongside the original Puhtikaura, such as PuhtiPro with fava or broad bean protein and Puhti-Omega with flax seeds.Kotimaisesta täysjyväkaurasta valmistettu Puhtikaura valittiin Vuoden suomalaiseksi elintarvikkeeksi vuonna 2016.

Yosa – In mid '90s Finnish Yosa was a pioneer, being the world premiere for a product made by fermentation of oat, utilizing selected probiotic lactic acid and bifido bacteria. The Yosa product range is 100 % plant-based made of Finnish wholegrain oats free from soya, milk, lactose and preservatives full of beneficial lactic acid- and bifido-bacteria. Yosa Sport, an oat snack rich in pea protein, is one among the newly launched Yosa products.

RE: Copenhagen

Photos ⎮ kuvat: Katja K. – Above, the view from my penthouse premium in Generator Hostel Copenhagen.

ENG The moment I landed at the Kastrup Airport in Copenhagen, I felt at home: "Once you get out of the Copenhagen airport, you may think you have walked on to the set of a ninja movie. In Denmark, everyone wears black."

"In the summertime, you are allowed to go for a wider range of colours, even something crazily flamboyant like grey," I later read, dressed in black, on Meik Wiking's The Little Book of Hygge: The Danish Way to Live Well (Penguin Life, 2016) that I carried around for three days while crisscrossing the city.

Gothersgade.

Christiania.

According to Wiking, the Danish consider their homes as cosy 'hygge headquarters' to the extent that "Danish TV dramas such as Borgen, The Killing and The Bridge are, by people abroad, sometimes referred to as 'furniture porn'. Most scenes are shot in beautifully decorated houses and flats furnished with Danish design classics."

"At this point, you are welcome to go Freudian on the Danes and point out that hygge seems to be about comfort food and security blankets. And perhaps you are right. Hygge is about giving your responsible, stressed out achiever adult a break. Relax. Just for a little while. It is about experiencing happiness in simple pleasures and knowing that everything is going to be OK.

The hygge wishlist, or the ten things that will make your home more hyggelig in Danish style include a hyggekrog – I see many examples of 'hygge corners' in the interior design magazines I bring back home with me; a fireplace; candles; things made out of wood; elements of nature; books; ceramics; the tactile dimension; vintage; blankets and cushions.

What's best, Wiking underlines, is that you can get hygge on the cheap – the best things in life are free!

1. Bring out the board games
2. Throw a pantry party – invite your friends over to your house for an afternoon or an evening of cooking and hygge so that everyone brings the ingredients to make something that goes in the pantry (or in the fridge)
3. Organize a TV night
4. Set up a mini-library in your shared stairway or elsewhere in the neighbourhood
5. Play boules (there's a boules, or pétanque, field in the hostel that I stay in, Generator Copenhagen)
6. Make a fire
7. Go to outdoor movies
8. Give a swap party
9. Go sledding
10. Or just play, in general!

Cosy Den Plettede Gris just around the corner from Papiro and Copenhagen Street Food, a café that even sells you a pair of hyggelig socks – and good beer! I tried the Fynsk Forår.

Gråbrødretorv.

Willing to take a hygge tour of Copenhagen, Wiking suggests you to do the following: Nyhavn (New Harbour); La Glace confectionery; Tivoli gardens; row boat in Christianshavn; Gråbrødretorv square where "even one of the hairdressing salons has a fireplace (and a French bulldog, who will happily sleep on your lap while you have your hair cut)"; Værnedamsvej street along which "cars zigzag between cyclists and pedestrians. This short street will make you slow down your pace, smell the flowers and the coffee. Florists, cafés, wine bars and interior design shops make this a wonderful place to spend a lazy and hyggelig afternoon"; a smørrebrød place; and the Library Bar at the Plaza Hotel.
My last stop in the city was Værnedamsvej and Falernum wine bar's sunny terrace, where I enjoyed marinated olives and a glass of white wine, after a light snowfall in the air...

Nyhavn.

Tanskassa kaikki pukeutuvat mustaan...

3. Pidä televisioilta
4. Perusta pienoiskirjasto kerrostalon tai naapuruston yhteisiin tiloihin
5. Pelaa petankkia (Generator Copenhagen -hostellissa, jossa yövyn, on petankkikenttä)
6. Tee nuotio
7. Mene ulkoilmaelokuviin
8. Järjestä vaihtojuhlat
9. Mene pulkkamäkeen

PS Other powerful books I read while in Copenhagen:
Chimamanda Ngozi Adichie – We Should All Be Feminists (2015)
Don Miguel Ruiz The Four Agreements. A Practical Guide to Personal Freedom
Zadie Smith – continued reading her newest Swing Time (2016) at intervals with Changing My Mind. Occasional Essays (2010) in which I especially enjoy the way the author frankly talks about her writing, among others
